Estelle could meet him like we discussed! Probably in the park, because she has a whole new city to poke around. It's incredible.

I was also thinking, if he got far enough afield, he could have met her dad, Cassius? He's a Seeker who did some roaming, and he could have ran into Eiji while he was roaming the wilderness and helped him out or something.

He is a big fan of the park! So it wouldn't be strange to run into him there.

Cassius is a pretty laid back, carefree guy that basically is a secret badass under all that; he's a tough cookie and a veteran of the Calderan army before he changed jobs to being a Seeker.

Then I think he and Eiji would have gotten along famously! Eiji could have fallen into a hoard of less-than-friendly pokemon or fallen into a cavern or something.

Ooh, that would work! Cassius could have rescued him, introduced himself as Cassius Bright, and helped him out of the cavern or what have you.

He uses a staff just like Estelle, too, so it seems like Eiji could probably realize Estelle's related to him without much effort. He is (and looks) about 40.
